Family-Friendly Chicken Tortilla Soup in 15 Minutes

When life feels full—whether you’re juggling work, caregiving, or simply trying to plan dinner without stress—simple meals can be a saving grace. This easy chicken tortilla soup is one of my go-to recipes that’s stayed in our family’s rotation for years. It’s warm, comforting, and incredibly easy to throw together—perfect for busy midweek evenings or slow Sundays.

The original version came from a Betty Crocker recipe, but over time I’ve added a few tweaks to make it even better (and easier). Using a rotisserie chicken or even canned chicken speeds things up, and the fire-roasted tomatoes add a smoky depth that makes it taste like you cooked all day. Bonus: it only takes about 15 minutes of prep and then simmers away in the slow cooker!

My version skips the green chilies (I prefer a gentler kick) and often includes southwestern corn for extra flavor. Want to save even more time? You can swap the spices for taco seasoning and still get a delicious bowlful of comfort.
